Testimony of Few

Seek not the favor of the multitude; it is seldom got by honest and lawful means. But seek the testimony of few; and number not voices, but weigh them.

Immanuel Kant

I made this beer the same Summer as Ideal of Imagination, both batches destined for Dark Cloud. Everyone liked both beers and most seemed to prefer the kolsh-style ale. I happened to like this one more, hence why I found this quote apt. I liked it so much, I almost kept the first batch for myself. Instead, I rebrewed a batch for my own taps a few months later.

Testimony of Few is a helles and is the third recipe I originally brewed for Dark Cloud Malthouse. Testimony was the first lager I ever brewed and I was surprised at how well it turned out. Delicate, malty, with a subtle and very present contribution from the hops.

Recipe and Logs

I had a glycol chiller going into my first lager. I learned that brewing a lager in August, even with temperature control, is still challenging. I have since learned a bit more about managing moisture and preventing mold on the neoprene insulating jackets on my fermenter. My next lager, Positive Metric, went so much smoother based on what I learned brewing the first batch of this recipe.

I brewed this again in 2019 for my own taps.
